Whip up a fun and vibrant jelly cake that's perfect for kids.
Ingredients:
  • 85g packet bubblegum jelly crystals
  • 200g packet jelly babies
  • 2 litres vanilla ice-cream
Instructions:
  • In a large heatproof jug, combine jelly crystals with boiling water, stirring until dissolved. Mix in 200ml of cold water. Chill in the refrigerator for 1 hour 30 minutes, or until just set.
  • Prepare a 6cm-deep, 22cm round cake pan by greasing it. Pour half of the jelly into the pan. Place jelly babies over the jelly layer. Gently pour the remaining jelly over the back of a large metal spoon into the pan. Freeze for 20 to 25 minutes, or until the jelly is just firm.
  • Allow the ice-cream to sit in a large bowl for 10 minutes until smooth and softened, stirring occasionally. Spread the softened ice-cream over the jelly mixture, ensuring a smooth top. Cover with plastic wrap and foil, then freeze overnight or until firm.
  • Take the cake out of the freezer. Gently slide a palette knife around the edges of the cake. Allow the cake to sit at room temperature for 2 minutes to soften slightly. Flip the cake onto a plate and present it.
