Rainbow jelly slice recipe

Exciting and tasty dessert creation.
Ingredients:
  • 250g pkt plain sweet biscuits
  • 125g butter, chopped, melted
  • 85g packet Jelly Crystals Blueberry
  • 500ml (2 cups) boiling water
  • 85g packet Jelly Crystals Lime
  • 85g packet Jelly Crystals Orange
  • 85g packet Jelly Crystals Strawberry
  • 4 x 250g pkts cream cheese, chopped, at room temperature
Instructions:
  • Place a double layer of baking paper in an 8cm-deep, square 20cm cake pan, making sure it overhangs by at least 10cm on each side.
  • Pulse the biscuits in a food processor until finely crumbled. Add the butter and pulse until mixed. Press the mixture firmly into the pan using a spoon. Chill in the fridge until needed.
  • In a heatproof bowl, combine the berry blue jelly crystals with 125ml (1/2 cup) boiling water. Whisk with a fork until the crystals completely dissolve. In a food processor, blend 1 packet of cream cheese until it becomes smooth. Slowly pour in the warm jelly mixture and blend until well combined, occasionally scraping down the sides. Transfer the mixture to a separate bowl and clean the food processor.
  • Repeat the process using lime, orange, and strawberry jellies and the remaining cream cheese packets. Transfer the mixtures into bowls. Remember to clean the food processor in between each batch.
  • Pour the berry blue mixture into a small jug and then into the center of the cake pan. Next, fill the jug with the lime mixture, pour it into the center of the berry blue mixture. Repeat the process for the orange and strawberry mixtures, pouring each into the center of the previous layer. Use a wooden spoon or knife to swirl the mixtures for a marbled effect. Refrigerate for 4 hours until set.
  • Cover cake pan with a sheet of baking paper. Flip onto a board, remove paper from base, then flip back onto a serving plate. Cut into pieces and serve.
