Whip up a colorful rainbow jelly loaf for a fun and easy kid-friendly dessert.
Ingredients:
  • 85g packet green apple jelly crystals
  • 750.00 gm boiling water
  • 1 small granny smith apple, cored, thinly sliced
  • 85g packet raspberry jelly crystals
  • 85g packet passionfruit jelly crystals
Instructions:
  • In a large heatproof jug, combine lime jelly crystals with 1 cup of boiling water. Mix until fully dissolved, then stir in 200ml of cold water. Chill in the refrigerator for 1 hour and 30 minutes, or until thickened.
  • Prepare a loaf pan by greasing it. Create two rows of apple slices, slightly overlapping, at the base of the pan. Using the back of a large metal spoon, gently pour apple jelly over the apples. Chill in the refrigerator for 2 hours or until set.
  • Prepare the raspberry jelly by combining the crystals with 1 cup of boiling water in a heatproof bowl. Stir until completely dissolved. Mix in 200ml of cold water and chill in the refrigerator for about an hour until it slightly thickens.
  • Drizzle raspberry jelly over apple jelly and chill until set, about 2 hours.
  • While you wait, combine passionfruit jelly crystals in a heatproof bowl with the remaining boiling water. Stir until fully dissolved, then mix in 200ml of cold water. Chill in the refrigerator for 1 hour or until slightly thickened.
  • 1. Pour passionfruit jelly over raspberry jelly and chill overnight until set. 2. Take out of the fridge and gently loosen one side with a knife. 3. Invert onto a plate. 4. Warm the base of the pan with a hot tea towel for 30 seconds. 5. Gently shake the cake until it releases from the pan. 6. Serve and enjoy!
