Rainbow custard cups

Magical unicorn jelly custard treats kids will adore!
Ingredients:
  • 600ml ctn pouring cream
  • 395g can condensed milk
  • Red, blue, green and yellow food colouring
  • 13.50 gm gelatine powder
  • Rainbow pearls, to decorate
Instructions:
  • Prepare a tray with six 150ml glasses and place them in the fridge. Combine the cream and condensed milk in a saucepan over low heat. Stir for 5 minutes until warm, then remove from heat.
  • Pour 150ml of cream mixture into a heatproof jug, then add a touch of red and blue food coloring to create a lovely pastel purple hue.
  • In a bowl, add 3 teaspoons of cold water and sprinkle 3/4 teaspoon of gelatine powder over it. Allow the gelatine to absorb into the water for a few minutes. Microwave on High for 20 seconds until heated. Stir well to dissolve the gelatine and let it cool slightly.
  • Combine the chilled gelatin mixture with the purple cream mixture, then evenly portion the mixture into the glasses. Chill in the fridge for 15-20 minutes until firm. Store any extra cream mixture at room temperature.
  • Prepare 5 additional layers in various colors using 150ml of cream mixture, 3 teaspoons of cold water, and 3/4 teaspoon of gelatine for each layer. Chill in the fridge between layers. Start with blue, followed by green, yellow, a mix of red and yellow for orange, and a touch of red for pink.
  • Whip thickened cream with electric beaters until soft peaks form. Separate into 3 bowls and tint one bowl yellow, another green, and the last pink. Alternate spoonfuls of colored creams into a piping bag with a fluted nozzle. Pipe cream onto custard cups and sprinkle with rainbow pearls.
