Rainbow party trifle

Prepare a colorful Rainbow Party Trifle - a hit with all ages! Make it in advance for a festive treat.
Ingredients:
  • 2 x 340g bags vanilla cake mix (see note)
  • 386.25 gm milk
  • Red, green, yellow and blue gel food colourings
  • 4 x 85g packets creaming soda jelly crystals
  • 250g strawberries, chopped
  • 86.63 gm orange juice
  • 900g tub double thick vanilla custard
  • 600ml thickened cream
  • Chocolate freckles, to decorate
  • M&M's (chocolate), to decorate
  • M&M's Minis (chocolate), to decorate
  • Magic Star Tops sprinkles, to decorate
  • Hundreds and thousands, to decorate
  • 285.00 gm NESTLÉ BAKERS' CHOICE White Choc Melts
Instructions:
  • Preheat the oven to 180C (160C fan-forced) while you prepare a 20cm square cake pan by greasing it and lining the base and sides with baking paper.
  • With an electric mixer, blend cake mixes, eggs, and milk for 3 minutes until fully combined. Separate mixture into 4 bowls. Add food coloring to create red, green, yellow, and blue portions. Drop spoonfuls of mixture into pan, alternating colors for a marbled look. Bake for 55 minutes to 1 hour until a skewer comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool. Enjoy your colorful marble cake!
  • Prepare the jelly according to the packet instructions. Chill in the refrigerator for 2 hours until the jelly has thickened and starts to set. Gently mix in the strawberries.
  • Prepare the cake by trimming edges and cutting into 3cm pieces. Layer half of the cake pieces on the bottom of a 14cm-deep, 20cm trifle bowl. Drizzle with half of the orange juice and spoon a third of the custard on top. Add half of the jelly mixture. Repeat with remaining cake, orange juice, half of the remaining custard, and the rest of the jelly. Cover with plastic wrap and refrigerate overnight.
  • Prepare Chocolate Curls: Place chocolate in a microwave-safe bowl and melt in the microwave, stirring every 30 seconds until smooth. Cut out ten 3cm x 14cm pieces of baking paper. Spread melted chocolate on each paper strip, sprinkle with hundreds and thousands and star sprinkles. Drape each paper strip over a rolling pin at an angle. Let set for 10 minutes, then carefully remove the paper and save the chocolate curls.
  • With an electric mixer, whip the cream and remaining custard until soft peaks form. Spoon the cream mixture over the trifle. Garnish the top with Chocolate Curls, freckles, M&M’s, M&M’s Minis, star sprinkles, and hundreds and thousands. Enjoy!
