Vibrant swirled marshmallows - a delicious crowd-pleaser.
Ingredients:
  • 3 egg whites
  • 161.25 gm caster sugar
  • 4.40 gm vanilla essence
  • Food colouring (yellow and pink)
Instructions:
  • Preheat your oven to 120C (100C fan-forced) and line three baking trays with baking paper.
  • With an electric mixer, whip egg whites until stiff peaks form, then gradually add sugar while beating for 8 to 10 minutes until the sugar dissolves. Finally, mix in the vanilla until well combined.
  • Insert a 5mm fluted nozzle into a piping bag. Dip one bamboo skewer into yellow food coloring and another bamboo skewer into pink food coloring. Create six stripes inside the piping bag by alternating between the two colors using the skewers.
  • Pipe 3cm rounds of mixture on prepared trays, leaving 2cm between each for spreading. Bake for 40 minutes or until meringues are firm. Let the meringues cool in the oven with the door slightly open. Serve and enjoy!
