Pinata party cake

Impress with a stunning rainbow pinata cake for the ultimate surprise!
Ingredients:
  • 500g butter, softened
  • 322.50 gm caster sugar
  • 26.10 gm vanilla extract
  • 6 eggs
  • 699.00 gm self-raising flour
  • 386.25 gm milk
  • 500.00 ml assorted lollies (see Notes)
  • 141.7g packet Rainbow Nerds
  • 2 x 150g tubs rainbow choc chips
  • 40.00 ml hundreds and thousands
  • 250g butter, softened
  • 8.80 gm vanilla extract
  • 450.00 gm icing sugar mixture, sifted
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease two 7cm-deep, 20cm round cake pans and line them with two layers of baking paper.
  • With an electric mixer, whip half of the butter, half of the sugar, and half of the vanilla for 5 minutes until it becomes light and fluffy. Add the eggs one at a time, beating until just combined after each addition. Slowly mix in half of the flour and half of the milk in batches until just combined.
  • Evenly distribute the mixture among the pans. Bake for 40 minutes or until a skewer comes out clean when inserted into the center of 1 cake. Let it sit in the pans for 10 minutes, then carefully flip the cakes onto wire racks lined with baking paper. Allow them to cool completely.
  • Make two more cakes by repeating the same steps with the remaining butter, sugar, vanilla, eggs, flour, and milk.
  • In a mixing bowl, use an electric mixer to beat the butter and vanilla until light and fluffy which should take 5 to 7 minutes. Gradually add the sugar, 1 tablespoon at a time, and continue beating until well combined.
  • To ensure even and flat cakes, trim the tops and make a 10cm round cut in the center of 2 cakes. Remove and discard the centers as per Notes.
  • Place one whole cake elegantly on a serving plate. Cover the top with a generous 1/4 cup of buttercream icing. Layer with one cut cake, then spread 2 tablespoons of icing on top. Add the remaining cut cake, spreading a delightful 1/4 cup of icing on top and inside the center hole. Fill the hole with a colorful assortment of lollies until it reaches the top. Finish by topping with the last cake layer and spreading the remaining buttercream icing over the top and sides of the cake.
  • Mix together Nerds, chocolate chips, and rainbow sprinkles in a bowl. Use the mixture to decorate the top and sides of the cake. Serve as desired.
