Try festive pinata cookies with a candy surprise for a merry Christmas treat.
Ingredients:
  • 120g butter, softened
  • 90g icing sugar
  • 1 tsp vanilla bean paste
  • 2 free range egg yolks
  • 150g plain flour
  • 150g self-raising flour
  • Bought royal icing, to decorate
  • 62.50 ml M&M’s Minis
Instructions:
  • Preheat your oven to 180C and prepare 2 baking trays by lining them with baking paper.
  • Start by using an electric mixer to cream together the butter and icing sugar until light and fluffy. Mix in the vanilla and egg yolks until well combined. Gradually add the combined flours and help your little one stir until just mixed. Transfer the dough onto a lightly floured surface and let your child knead until smooth.
  • Roll out the dough on a lightly floured surface into a 3mm-thick disc. Have your child use a star-shaped Christmas biscuit cutter to cut out stars. Place them on a baking tray. Using a smaller star-shaped cutter, create a cutout in the center of a third of the stars. Remove the small stars to make star outlines. Continue this process until you have 28 full stars and 14 star outlines.
  • Bake until lightly golden, about 10 minutes, then cool on trays.
  • Follow the packet directions to make the royal icing. Transfer the icing into a sealable plastic bag and cut off a small corner. Help your child pipe icing along the edge of a full star and place a cut-out star on top. Fill with a teaspoon of M&M’s Minis and pipe more icing over the top. Sandwich with another full star. Let it set aside. Repeat for the rest of the biscuits. Decorate the biscuits with icing dots on top.
