Kids will love these vibrant rainbow waffles!
Ingredients:
  • 450g (3 cups) self-raising flour
  • 2.50 gm bicarbonate of soda
  • 30.00 gm caster sugar
  • 435ml (1 3/4 cups) milk
  • 3 eggs
  • 90g butter, melted
  • 6 different food colourings (see note)
  • Ice-cream, to serve
  • Maple syrup, to serve
Instructions:
  • Preheat your waffle maker while sifting flour and bicarbonate of soda into a large bowl. Mix in the sugar. Whisk in the milk, eggs, and butter using a balloon whisk until fully combined.
  • Divide the mixture among 6 bowls and add a few drops of different food coloring to each bowl. Stir until the mixture is vibrant in color.
  • Transfer the mixture into individual piping or sealable plastic bags. Snip off the end or corner of each bag and place them in a glass, standing upright.
  • Spoon one colored mixture about 2cm from the edge of the waffle maker to form a ring. Pipe a different colored ring inside the first one. Continue layering different colors to create 4-5 rings. Close the waffle maker and cook for 1 minute or until done. Repeat the process with the remaining mixtures, alternating colors for each waffle.
  • Place waffles in a tempting tower on a plate and generously crown them with ice-cream and drizzle with maple syrup.
