Irresistible buckwheat pikelets with apples and cinnamon, perfect for kids!
Ingredients:
  • 250.00 ml plain flour
  • 70.00 gm buckwheat flour (see note)
  • 12.00 gm baking powder
  • 257.50 gm reduced-fat milk
  • 1 medium red apple, peeled, coarsely grated
  • Olive oil cooking spray
  • Vanilla yoghurt, to serve
Instructions:
  • Combine the sifted flours, baking powder, and cinnamon in a bowl. Mix in the milk, eggs, sugar, and apple until well combined. Cover with plastic wrap and refrigerate for 30 minutes.
  • Prepare a non-stick frying pan with a light spray of oil and heat over medium heat. Cook pikelets by using tablespoons of batter at a time in batches. Once small bubbles form on the surface (about 1-2 minutes), flip the pikelets over and cook until golden and cooked through (another 1-2 minutes). Transfer the pikelets to a wire rack to cool before serving with yogurt.
