Buckwheat sourdough flapjacks with a hint of ginger for a rustic and flavorful twist.
Ingredients:
  • 2 cups sourdough starter
  • 2 eggs, beaten
  • 1 tablespoon vegetable oil
  • 1 cup buckwheat flour
  • 1 teaspoon ground ginger
Instructions:
  • Combine the starter, egg, vegetable oil, sugar, and vanilla in a large bowl. Add the salt, buckwheat flour, all-purpose flour, baking soda, and ginger. Mix until just combined. Adjust the consistency by adding more flour or water based on the thickness of your starter. The batter should be pourable without being too runny.
  • Preheat griddle to 400°F (200°C) and lightly grease. Pour 1/4 to 1/3 cup of batter onto hot griddle. Cook until bubbles form on the top, then flip and cook for 2 more minutes. Serve hot!
