Transform discard sourdough starter into delicious sweet or savory golden crêpes.
Ingredients:
  • 1 cup fed or unfed sourdough starter
  • 2 large eggs
  • 2 tablespoons butter, melted
  • 0.25 teaspoon salt
  • 0.25 cup milk, or more as needed
  • 6 teaspoons cold butter
Instructions:
  • Combine sourdough starter, eggs, melted butter, and salt in a large bowl. Add milk and mix until batter is thin and smooth.
  • Preheat a nonstick pan over medium-high heat.
  • In a preheated pan, melt 1 teaspoon of cold butter. Pour in 1/4 cup of batter, tilt the pan in a circular motion to spread the batter evenly. Cook until the bottom is light brown, around 2 minutes. Gently loosen the crêpe from the pan, flip, and cook for an additional 30 seconds. Transfer to a plate. Repeat the process with the remaining butter and batter.
