Buddy’s one-cup pancakes

Simple fluffy cupcake-style breakfast treats with customizable toppings. Easy and delicious morning indulgence.
Ingredients:
  • 1 cup of self-raising flour
  • 1 cup of semi-skimmed milk
  • 1 large free-range egg
  • unsalted butter or olive oil for frying
  • seasonal berries such as raspberries, blueberries, strawberries, blackberries
  • banana peeled and sliced
  • apple or pear peeled and grated
  • runny honey or maple syrup
  • natural yoghurt
Instructions:
  • Measure out the flour into a cup and transfer it to a large bowl. Use the same cup to pour in the milk and then add the egg. Mix everything together until smooth. Heat a non-stick frying pan over medium heat. Melt a small amount of butter in the pan, then ladle in the batter to make pancakes. Cook until bubbles form on the surface, about 1 to 2 minutes, then flip and cook for another 1 to 2 minutes until golden. Repeat with the remaining batter. Serve the pancakes with your favorite toppings like fruit and honey.
