Buddy's Bolognese

Ingredients:
  • 2 free-range pork sausages
  • olive oil
  • 500 g lean beef mince
  • 2 onions
  • 2 cloves of garlic
  • 1 large carrot
  • 1 stick of celery
  • 1 courgette
  • 2 tablespoons thick balsamic vinegar
  • 2 x 400 g tins of plum tomatoes
  • 1 heaped teaspoon tomato purée
  • 450 g dried spaghetti
  • Parmesan cheese to serve
Instructions:
  • Heat a large pan and remove sausage meat from the skins. Add 1 tbsp of olive oil and meat to the pan, breaking it up. Cook for 5 mins, stirring occasionally. Prepare vegetables (onions, garlic, carrots, celery, courgette). Grate all the vegetables and garlic, add to the pan. Cook on medium-low for 10-15 mins until soft. Add balsamic vinegar, tinned tomatoes, water, tomato purée, and black pepper. Cook on low for 2-3 hours until thick. Cook pasta according to package, saving some starchy water. Add pasta to sauce, using reserved water as needed. Mix well and serve with Parmesan.
