Buddy's easy meatballs

Grate veggies, mix, and shape into flavorful veggie meatballs with minimal chopping.
Ingredients:
  • 1 onion
  • 4 cloves of garlic
  • 1 courgette
  • 6 chestnut mushrooms
  • olive oil
  • 200 g higher-welfare lean minced beef
  • 200 g higher-welfare lean minced pork
  • 50 g wholemeal breadcrumbs
  • 20 g Parmesan cheese
  • 1 large free-range egg
  • 1 x 600 g jar of passata
Instructions:
  • Peel the onion and garlic cloves, then grate them along with the courgette and mushrooms using a box grater. Transfer to a large frying pan over medium heat with olive oil. Cook for 10 minutes until softened. Transfer the cooked vegetables to a bowl to cool. Mix in minced beef, pork, breadcrumbs, most of the Parmesan cheese, egg, and black pepper. Combine everything well by squishing it together with your hands. Shape mixture into 24 small balls and refrigerate for 10 minutes. Heat oil in a non-stick pan over medium heat. Cook the meatballs for 8 to 10 minutes until golden brown, turning regularly. Chop the remaining garlic cloves and add to the pan with passata. Simmer for 30 minutes until meatballs are cooked through and sauce is thick, stirring occasionally. Enjoy!
