Buddy's super veggie burgers

Delicious chickpea veggie burgers with smoky paprika, refreshing coriander, and zesty lemon. Easy for kids to make, customize with fun toppings.
Ingredients:
  • 1 bunch of fresh coriander (30g)
  • 1 x 400g tin of chickpeas
  • 200 g frozen peas
  • 1 teaspoon smoked paprika
  • 1 heaped tablespoon plain flour plus extra for dusting
  • 60 g Cheddar cheese
  • 1 little gem lettuce
  • 2 large ripe tomatoes
  • 4 burger buns preferably wholemeal
  • ½ a small white and ½ a small red cabbage (roughly 200g of each)
  • 1 medium carrot
  • ½ a red onion
  • 4 heaped tablespoons fat-free natural yoghurt
  • 1 heaped teaspoon wholegrain mustard
Instructions:
  • Place coriander stalks in a food processor, then add drained chickpeas, peas, smoked paprika, flour, and grate in lemon zest. Blitz mixture until combined but slightly chunky. Divide into 4, shape into patties, and cook in oil for 3-4 minutes on each side until golden. Top with cheese, cover, and melt. For slaw, grate cabbages, carrot, and onion, mix with yoghurt, mustard, salt, and pepper. Assemble burgers with lettuce, tomato, and condiments in buns, serving with rainbow slaw on the side.
