Buffalo Chicken Potato Casserole

Spice up potato casserole by adding flavorful buffalo chicken for a quick and delicious dinner.
Ingredients:
  • 2 boxes (4.7 oz each) Betty Crocker™ scalloped potatoes
  • 4 cups boiling water
  • 1 1/3 cups milk
  • 1 package (8 oz) cream cheese, softened
  • 2 cups cubed cooked chicken
  • 1/4 cup Frank's™ RedHot™ Buffalo Wings Sauce
  • 2 cups Progresso™ plain panko crispy bread crumbs
  • 2 tablespoons butter
  • 1/4 teaspoon garlic powder
  • 1/2 cup blue cheese crumbles, if desired
  • Celery sticks, if desired
Instructions:
  • Preheat oven to 375°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Prepare scalloped potatoes according to the stove-top directions on the box. Set aside the butter for later use. Mix in cream cheese, chicken, and Buffalo wing sauce. Transfer the mixture to a baking dish.
  • In a 10-inch skillet, melt butter over gentle heat. Toast bread crumbs in butter for about 5 minutes until they turn a light golden brown. Mix in garlic powder. Sprinkle the flavorful mixture over the chicken and potatoes.
  • Place in the oven for 12 to 15 minutes, or until the sauce is bubbling. Allow to rest for 5 minutes before serving to allow the sauce to thicken. Enjoy with blue cheese and celery sticks.
