Spicy Buffalo Chicken Tacos: Crispy chicken tenders rolled in flour tortillas for a winning game day treat ready in just 30 minutes.
Ingredients:
  • 1 tablespoon olive oil
  • 1 lb uncooked chicken breast tenders (not breaded)
  • 1/2 teaspoon salt
  • 3/4 cup chopped celery
  • 1 tablespoon butter
  • 3 to 6 tablespoons Frank's™ RedHot™ Original cayenne pepper sauce
  • 8 tortillas from 1 package (8.2 oz) Old El Paso™ Flour Tortillas for Soft Tacos and Fajitas (10 Count), heated as directed on package
  • 1/4 cup crumbled blue cheese (1 oz)
  • 24 small celery leaves
  • 24 parsley leaves
  • 1 large avocado, pitted, peeled and sliced
Instructions:
  • Heat oil in a large skillet over medium-high heat. Season both sides of chicken tenders with salt and add them to the skillet. Cook for 4 to 6 minutes, flipping once, until chicken is cooked through. Transfer chicken to a cutting board and chop into small pieces.
  • In the same skillet, sauté the celery over medium heat for 2 minutes until tender. Stir in butter and the amount of pepper sauce you prefer. Mix in the chopped chicken and cook until hot.
  • Place a generous amount of the chicken mixture onto the center of each warmed tortilla. Sprinkle with cheese, celery leaves, parsley leaves, and avocado. Fold the sides of the tortilla over the filling and serve promptly.
