Tantalizingly flavorful Asian grilled pork belly with a perfect sweet and spicy kick.
Ingredients:
  • 36.00 gm sugar
  • 40.00 gm warm water
  • 1kg belly pork, skin removed, thinly sliced
  • 7 green shallots, ends trimmed, finely chopped
  • 2 eschalots (French shallots), finely chopped
  • 48.80 gm fish sauce
  • Freshly ground black pepper
  • 60ml (1/4 cup) vegetable oil
Instructions:
  • In a small saucepan over medium heat, caramelize the sugar by cooking and shaking occasionally for 5 minutes. Remove from heat and cautiously stir in warm water. Let it cool slightly for 5 minutes before using.
  • Mix together the sugar mixture, pork, green shallots, eschalots, and fish sauce in a large bowl. Add a sprinkle of pepper for seasoning. Cover the bowl with plastic wrap and refrigerate for 30 minutes to let the flavors mingle.
  • Heat the chargrill or barbecue to medium-high. Mix oil into the pork mixture until combined. Grill one-third of the pork on the heated grill, turning occasionally, for about 10 minutes or until cooked through. Transfer to a plate. Repeat for the remaining pork in two more batches.
