Create a delicious Vietnamese noodle salad with just 6 simple ingredients.
Ingredients:
  • 675g pkt frozen vegetable cocktail spring rolls
  • 150g rice vermicelli noodles
  • 260g pkt Asian salad mix
  • 250ml Satay Sauce, warmed slightly
  • Baby mint, to serve
  • Lime halves, to serve
Instructions:
  • Fry spring rolls per package instructions until golden and heated.
  • Place the noodles in a heatproof bowl and cover them with boiling water. Let them soak for 20 minutes, then drain and toss with half of the satay sauce.
  • Present alongside spring rolls, a fresh salad mix, delicate baby mint leaves, lime wedges, and the extra satay sauce for dipping.
