Bunny Cake with Round Cake Pans

Make an adorable bunny cake with just two round cake pans - ideal for Easter gatherings.
Ingredients:
  • 1.75 cups all-purpose flour
  • 1.5 cups white sugar
  • 0.875 cup unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 2 eggs
  • 1 cup milk
  • rapeseed oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water, or more as needed
  • 1.125 cups unsalted butter, at room temperature
  • 4.5 cups confectioners' sugar, or more as needed
  • 2 tablespoons milk
  • 0.25 cup sweetened flaked coconut
  • 10 assorted candy decorations
  • 1 ounce black gel food coloring
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), then give those two 9-inch springform pans a loving grease and flour treatment.
  • In a large bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Create a well in the center and add eggs, milk, oil, and vanilla extract. Use an electric mixer on medium speed to blend for about 2 minutes until fully combined. Fold in boiling water then evenly distribute the batter into the springform pans.
  • Bake in the preheated oven for 30 to 35 minutes until a toothpick inserted into the center comes out clean. Allow to cool in the pans on wire racks for 10 minutes, then loosen the edges using a table knife. Carefully invert onto wire racks and cool completely for about 30 minutes.
  • In a large bowl, combine the butter and vanilla extract until creamy. Gradually add confectioner's sugar, blending well after each 1/2 cup, until fully mixed. Mix in the milk until the frosting is light and fluffy. Cover the icing until you're ready to decorate.
  • Transfer one whole cooked cake onto a serving tray for the bunny's head. Cut 2 convex-shaped ears from each side of the second cake and attach them to the head. Utilize the remaining concave-shaped piece as a bowtie, positioning it approximately 1/2 inch below the head.
  • First, generously coat the cake with frosting until the entire surface is covered. Next, sprinkle flaked coconut on top to create a fur-like texture. Then, add candy decorations to create the bunny face and bowtie. Finally, use black decorating icing to draw whiskers on the bunny's face.
