Cupcake Bunny Cake

Make a fun and simple bunny cake with the kids, just like making cupcakes.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Vanilla Cake Mix (or your favorite flavor)
  • Water, vegetable oil and eggs called for on cake mix box
  • Tray or cardboard (16x14 inches) covered with wrapping paper and plastic food wrap or foil
  • 1 bag (10.5 oz) miniature marshmallows (white)
  • 2 tubs (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • Betty Crocker™ pink or red gel food color
  • 2/3 cup pink miniature marshmallows (from 10.5-oz bag fruit-flavored miniature marshmallows)
  • 2 snack-size dark chocolate-covered peppermint patties (from 12-oz bag)
  • 1 tube (0.68 oz) Betty Crocker™ black decorating gel or 3 to 4 pieces black string licorice
Instructions:
  • Preheat the oven to 350°F (325°F for dark or nonstick pans) and line 24 regular-size muffin cups with paper baking cups. Follow the instructions on the cake mix box to make the batter for 24 cupcakes. Bake as directed, then let the cupcakes cool in the pans for 10 minutes before transferring them to a cooling rack. Allow the cupcakes to cool completely for about 30 minutes.
  • Empty bag of white miniature marshmallows into a large shallow bowl. Transfer 2 tablespoons of the frosting into a small bowl; mix in food color to achieve desired shade of pink for the nose. Keep aside. Frost the cupcakes generously with the remaining frosting, ensuring a slightly mounded top. Dip the top of each cupcake into the marshmallows to cover completely. Arrange the cupcakes snugly on a platter. Fill in any gaps between cupcakes with extra marshmallows to create the face.
  • Decorate by sprinkling pink marshmallows on the center of each ear. Add peppermint patties on the face for the eyes. Use pink frosting to outline the face's nose. Create whiskers with three 3-inch lines of black decorating gel on each side of the nose, and add two lines below the nose for the mouth. Alternatively, use six thin 3-inch pieces of licorice for whiskers and two thin 5-inch strips for the mouth. Store with a loose cover.
