Easter-themed carrot cake with cute PEEPS® bunnies and carrot-shaped cupcakes. Perfect for spring celebrations!
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 4 eggs
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 cups coarsely shredded peeled carrots
  • 2 tubs (16 oz) Betty Crocker™ Rich & Creamy Cream Cheese Frosting
  • 23 PEEPS® brand yellow marshmallow bunnies
  • Betty Crocker™ Red and Yellow Gel Food Colors
  • 1 creme-filled chocolate sandwich cookie, filling removed, finely crushed
  • 1 pull-and-peel green apple licorice twist
Instructions:
  • Preheat oven to 350°F (or 325°F for dark or nonstick pans), then generously spray two 8-inch round cake pans with cooking spray and line 1 regular-size muffin cup with a paper baking cup.
  • In a large bowl, blend cake mix, oil, water, eggs, cinnamon, and nutmeg with an electric mixer on medium speed for 2 minutes, scraping the sides occasionally. Gently fold in the carrots.
  • Fill baking cups with 1/4 cup batter each and bake for 15 to 20 minutes until a toothpick inserted in the center comes out clean. Let cool for 10 minutes, then transfer cupcakes to a wire rack to cool completely. Place cupcakes in the freezer for frosting later. Divide the remaining batter evenly between two round pans (about 2 1/4 cups each) and bake for 28 to 33 minutes until a toothpick inserted in the center comes out clean. Cool for 10 minutes, then run a knife around the edges, remove from pans, and cool completely on a rack for about 1 hour.
  • Spread 2/3 cup frosting between cake rounds. Set aside 1/2 cup frosting. Use remaining frosting to cover the sides and top of the cake. Place 22 PEEPS® bunnies around the bottom edge of the cake, gently pressing them into place.
  • Tint 1/2 cup of reserved frosting orange by adding red and yellow gel food colors. Take the cupcake out of the freezer, frost the bottom half with the orange frosting, and place it frosted side down in the center of the cake. Proceed to cover the cupcake entirely with frosting.
  • Sprinkle crushed cookie around the base of the frosted cupcake for a decorative touch. Cut a licorice twist in half crosswise. Set aside one half for later use. Pull apart the ends of the remaining half, leaving one end intact to resemble a carrot top. Press the intact end of the licorice into the top of the cupcake to finish the carrot. Finally, place the remaining PEEPS® bunny next to the carrot for a cute presentation.
