Satisfying and nutritious burghul salad: low-fat, low-carb, and lower GI.
Ingredients:
  • 40g burghul
  • 200g grape tomatoes, thinly sliced
  • 2 salad onions, thinly sliced
  • 40.00 ml roughly chopped mint leaves
  • 125.00 ml roughly chopped chervil or flat leaf parsley
  • 42.00 gm lemon juice
  • 9.20 gm olive oil
  • 400g can soy beans, rinsed, drained
  • 4 large butter lettuce leaves
Instructions:
  • In a bowl, combine the burghul with 1/2 cup (125ml) boiling water. Let it soak for 10 minutes. Drain and gently squeeze out any excess moisture using your hands.
  • Combine the burghul, tomatoes, onion, mint, chervil or parsley, lemon juice, oil, and beans in a large bowl. Season with salt and pepper to taste, then mix thoroughly.
  • Lay a crisp lettuce leaf on each plate, generously scoop the flavorful burghul mixture over it, and present it for serving.
