Rich, bitter caramel complements the sweet ice-cream perfectly.
Ingredients:
  • 150g (2/3 cup) caster sugar
  • 250ml (1 cup) milk
  • 250ml (1 cup) thin cream
  • 6 egg yolks
Instructions:
  • In a saucepan over low heat, melt the sugar until it turns dark golden. Take the pan off the heat. Gradually mix in the milk and cream (expect the caramel to harden). Return the saucepan to medium heat, stir until the caramel melts, and the mixture is smooth and just starts to boil. Remove from heat.
  • In a large heatproof bowl, vigorously whisk egg yolks until they become thick and pale. Slowly incorporate the hot caramel mixture into the egg yolks while stirring consistently.
  • Transfer the caramel mixture to a clean saucepan and gently stir with a wooden spoon over low heat for 6-8 minutes until it thickens and coats the back of the spoon. Then, strain the mixture into a metal container and let it cool for 30 minutes. Cover with foil and freeze for 2-3 hours until nearly set. Enjoy your delicious caramel creation!
  • Roughly chop the frozen ice cream with a metal spoon, then transfer it to a bowl and beat with an electric mixer until smooth. Return the ice cream to the metal container, cover with foil, and freeze for 2 hours.
  • Break up ice-cream into chunks, then beat with an electric beater until smooth. Transfer to a bowl, freeze in a metal container for 6-8 hours or overnight until firm.
