Spiced burnt caramel ice-cream

Caramelize sugar until golden for richer ice cream flavor.
Ingredients:
  • 375ml milk
  • 4 whole star anise
  • 2 cinnamon sticks, broken
  • 270g caster sugar
  • 300ml thickened cream
  • 8 egg yolks
  • Ice-cream cones, to serve
Instructions:
  • Chill a shallow metal container in the freezer. In a medium saucepan over medium heat, combine milk, star anise, and cinnamon. Bring to a simmer (avoid boiling). Remove from heat and let sit for 1 hour to infuse.
  • In a medium frying pan over medium heat, caramelize 1 cupful (215g) of sugar by stirring occasionally with a wooden spoon for about 5 minutes until dissolved. Remove from heat and gently pour in the cream. Return to heat, mix for 3-4 minutes until the caramel melts and the mixture becomes smooth. Remove from heat.
  • In a large bowl, whisk the egg yolks with the remaining sugar until pale and creamy. Slowly mix in the milk and cream until thoroughly combined. Transfer the mixture to a clean saucepan and cook over low heat for about 5 minutes until slightly thickened and coats the back of a spoon. Remove from heat.
  • Pour the mixture through a sieve into the chilled container, cover with foil, and place in the freezer for 6 hours or until nearly set.
  • Take out the ice-cream from the freezer and use a metal spoon to break it up. Transfer the ice-cream to a food processor and blend until smooth. Put the mixture back into the metal container and freeze for another 4 hours, or until firm.
  • Fill crispy, golden cones with scoops of delicious ice cream for the perfect treat.
