Burnt honey panna cotta with poached nectarines

Impress guests with make-ahead brandy panna cotta topped with fresh fruit. Ideal for entertaining.
Ingredients:
  • 80ml (1/3 cup) honey
  • 60ml (1/4 cup) brandy
  • 300ml thickened cream
  • 250ml (1 cup) milk
  • 100g (1/2 cup) caster sugar
  • 3 gelatine leaves
  • Poached nectarines, sliced, with syrup, to serve (see notes)
Instructions:
  • In a small saucepan over medium heat, caramelize the honey by stirring often for about 5 minutes. Then add the brandy and simmer for 2 minutes to cook off the alcohol. Let it cool slightly before using.
  • In a saucepan over medium heat, combine the cream, milk, and sugar. Stir and cook until the mixture is almost boiling. Remove from heat.
  • In a bowl, soak gelatine leaves in cold water for 2 minutes to soften. Squeeze out excess water and mix gelatine with the cream mixture. Add the honey mixture and stir to combine. Divide into 4 jars, cover, and refrigerate for 4 hours. Serve with nectarines and syrup on top.
