Burnt orange sparkling wine cocktail

Burnt orange-infused wine cocktail, perfect for entertaining.
Ingredients:
  • 1 small orange
  • 8 sugar cubes
  • 750ml bottle sparkling wine, chilled
  • 20.00 ml Angostura bitters
  • Orange rind, to serve
  • Ice cubes, to serve
Instructions:
  • Slice the orange in half lengthwise, then thinly slice it.
  • Preheat a chargrill pan over medium-high heat until sizzling hot. Grill orange slices for 2 to 3 minutes on each side until nicely charred.
  • Split the sugar cubes and orange evenly among the serving glasses, then pour sparkling wine over the top.
  • Drizzle the dish with bitters, then serve it with ice-cubes and garnish with orange rind.
