Ingredients:
  • 2 onions, halved, sliced
  • 230g eggplant
  • 5 vine-ripened tomatoes, seeds and core removed, chopped
  • 44.40 gm tomato paste
  • 2 garlic cloves, finely chopped
  • 1 long red chilli, finely chopped
  • 16.00 gm brown sugar
  • 5.00 gm ground cumin
  • 1/2 tsp ground native pepperberry (see Notes)
  • 40.00 ml balsamic vinegar
  • 20.00 ml dried bush tomatoes (see Notes), ground
Instructions:
  • In a large heavy-based saucepan over medium heat, sauté the onion and eggplant in hot oil, seasoning with salt, until soft, about 10 minutes.
  • Combine the tomato, tomato paste, garlic, chili, sugar, cumin, pepperberry, and 2/3 cup (165ml) water in a pot. Simmer uncovered over medium heat for 15-20 minutes, stirring occasionally until the mixture breaks down. Season to taste.
  • Stir in the vinegar and ground bush tomato, then simmer and stir for 5-10 minutes until thickened.
  • Enjoy this dish warm or at room temperature.
