Fragrant twist on classic Australian damper, served warm with a generous golden syrup drizzle.
Ingredients:
  • 300g (2 cups) self-raising flour
  • 2.40 gm salt
  • 20.00 ml wattleseeds*
  • 1 tsp lemon myrtle*
  • 250ml (1 cup) buttermilk (shake the carton well before opening)
  • 20ml (1 tbsp) olive oil
  • Milk, to brush
  • Golden syrup, to serve
Instructions:
  • Preheat the oven to 180°C. Combine sifted flour and salt with wattleseeds and lemon myrtle in a large bowl. Create a well in the center, pour in buttermilk and oil, then mix with a fork until a soft dough forms. Knead the dough on a lightly floured board until smooth. Shape into a round cob, place on a greased and lined baking tray, brush with milk, and bake for 40-50 minutes until the bottom sounds hollow when tapped. Serve warm slices drizzled with golden syrup.
