Revitalize damper with flavorful olives.
Ingredients:
  • 450.00 gm self-raising flour
  • 1.20 gm salt
  • 5.00 gm caster sugar
  • 75g butter, chilled, cubed
  • 250.00 ml drained Spanish black sliced olives
  • 20.00 ml chopped fresh oregano
  • 128.75 gm milk
  • assorted dips, to serve
Instructions:
  • 1. Preheat your oven to 180°C and grease a baking tray before lining it with baking paper. 2. In a bowl, combine flour, salt, and sugar, then use your fingertips to rub the butter into the mixture until it resembles fine breadcrumbs. 3. Stir in the olives and oregano.
  • Combine milk and 1/2 cup cold water with the flour mixture until a sticky dough forms. Add more water if needed. Transfer dough to a floured surface and knead until smooth. Shape into a 20cm round and place on a prepared tray.
  • Score the top of the damper into 8 wedges using a sharp knife. Bake for 40 to 50 minutes or until golden and hollow-sounding when tapped. Let it rest on the tray for 5 minutes, then transfer to a wire rack to cool.
  • Accompany the damper with a variety of delicious dips.
