Impress guests with cheesy, olive, and salami pizza damper, perfect for tea or as a lunchbox treat.
Ingredients:
  • 300.00 gm self-raising flour
  • 20.00 gm caster sugar
  • Pinch of salt
  • 60g butter, chilled, chopped
  • 195.00 gm buttermilk
  • 50g Danish salami, finely chopped
  • 82.50 ml grated pizza cheese
  • 62.50 ml pitted kalamata olives, finely chopped
  • 40.00 ml fresh flat-leaf parsley, finely chopped
  • Buttermilk, extra, for brushing
Instructions:
  • Preheat your oven to 220C/200C fan-forced, then line a baking tray with parchment paper and place it on the top rack of the oven.
  • Combine flour, sugar, and salt in a bowl and sift together. Add butter and rub it into the flour mixture with your fingertips until it resembles fine breadcrumbs. Mix in salami, cheese, olives, and parsley.
  • Create a hollow in the center of the mixture and pour in the buttermilk. With a flat-bladed knife, mix until a sticky dough comes together. Transfer onto a lightly floured surface and gently knead until the dough is just smooth.
  • Shape dough into a 20cm round, transfer to prepared tray, and carefully slice into 8 wedges without cutting all the way through.
  • Bake for 20 to 25 minutes until golden brown and crisp on top. Enjoy!
