Elevate homemade pizzas with a unique store-bought damper crust twist.
Ingredients:
  • 800g bread
  • 80ml (1/3 cup) pizza sauce
  • 130g (1 1/4 cup) coarsely grated pizza cheese blend
  • 1/2 small red onion, thinly sliced
  • 100g sliced mushrooms
  • 1 small red capsicum, deseeded, thinly sliced
  • 100g chorizo, sliced
  • 10 kalamata olives, pitted
  • 100g thinly sliced prosciutto
  • 60g pkt baby rocket
Instructions:
  • Preheat your oven to 190°C/170°C fan forced and line a large baking tray with parchment paper.
  • Cut off the top quarter of the damper and hollow out the inside to create a 2cm-thick shell. Place the hollowed damper on the prepared tray, setting aside the removed bread for later use.
  • Spread the damper with luscious pizza sauce, layer with a generous amount of cheese, then pile on the onion, mushroom, capsicum, chorizo, and olives. Finish with a final sprinkle of cheese. Bake until the cheese is perfectly melted and gorgeously golden, about 15-20 minutes.
  • Lay thinly sliced prosciutto and fresh arugula on top. Cut into triangular wedges and enjoy.
