Ingredients:
  • 8g sachet dried yeast
  • 180ml water
  • 2.50 gm caster sugar
  • 300g plain flour
  • 2.40 gm salt
  • 82.50 ml pizza sauce
  • 150g marinated artichokes, sliced
  • 150g chargrilled capsicum, sliced
  • 140g prosciutto
  • 60g pitted Kalamata olives
  • 170g bocconcini, sliced
  • 30g baby rocket leaves
Instructions:
  • Preheat your oven to 200°C. Combine yeast, water, and sugar in a bowl and let it sit for 10 minutes. In a large bowl, sift together flour and salt. Then, stir the yeast mixture into the flour until well combined.
  • On a dusted surface, knead the dough for 5 minutes until smooth. Transfer it to a generously greased bowl, cover, and let it rise in a cozy spot for 45 minutes. Afterward, punch down the dough and continue kneading until it reaches a smooth consistency.
  • Cut the dough in half. Roll out each half on a lightly floured surface into a 28cm diameter circle and place them on pizza trays.
  • Spread the pizza sauce on the bases, then add artichokes, capsicum, prosciutto, and olives. Bake for 18-20 minutes. Arrange the bocconcini on top and cook for an additional 2 minutes. Serve topped with rocket.
