Reinvent Aussie damper as a bush hot dog for a playful campfire treat!
Ingredients:
  • 300.00 gm self-raising flour
  • 30g butter, chopped
  • 195.00 gm buttermilk
  • 6 frankfurts
  • Tomato sauce, to serve
Instructions:
  • In a bowl, gently combine flour and butter with fingertips until mixture resembles breadcrumbs. Create a well in the center and pour in buttermilk. Stir with a knife until a soft dough forms, adding more buttermilk if needed. Transfer to a floured surface, knead gently until smooth (avoid over-kneading).
  • Divide the dough into 6 equal portions. Roll out one portion into a 10cm x 16cm rectangle. Insert one paddle pop stick into the end of each frankfurt. Position the frankfurt in the center of the dough and roll it up to wrap the frankfurt. Repeat this process with the rest of the dough, paddle pop sticks, and frankfurts.
  • Preheat a large, oiled cast iron pot over high heat until sizzling. Brush the dough with egg, then gently place it in the pot and cover with a lid. Lower the heat to low and cook, rotating occasionally, for 15 minutes until golden all over. Remove carefully from the pot and serve with tomato sauce.
