Elevate your night with a vibrant and diverse salad starter.
Ingredients:
  • 1 x 420g can butter beans, rinsed, drained
  • 50g baby spinach leaves
  • 1 radicchio, outer leaves removed, washed, torn
  • 4 ripe yellow egg tomatoes, thickly sliced lengthways
  • 120g low-fat feta, thinly sliced
  • 31.50 gm fresh lemon juice
  • 30.00 ml Greek-style natural yoghurt
  • 1 small garlic clove, crushed
  • 5.90 gm wholegrain mustard
  • Salt & freshly ground black pepper
Instructions:
  • Gently mix butter beans, baby spinach, radicchio, tomato, and feta in a large bowl until well combined.
  • Combine zesty lemon juice, creamy yogurt, pungent garlic, and tangy mustard in a small bowl. Mix until well incorporated. Season with a pinch of salt and a sprinkle of pepper to taste.
  • Distribute the salad onto individual plates, generously drizzle with dressing, and serve alongside fragrant garlic pizza.
