Instructions:
  • 1. Preheat oven to 180°C/350°F/gas 4. Heat 1 tablespoon of olive oil in a large non-stick ovenproof frying pan over medium heat. 2. Form 3cm balls with sausagemeat, remove from skins, and brown evenly for 3 minutes. Transfer to a plate. 3. Cook frozen mixed veg in the pan for 10 minutes, then add beans with juices. 4. Use clean hands to crush and add tomatoes. Season with black pepper and bring to a boil. 5. Stir in half of the feta, add meatballs, and top with remaining feta chunks. 6. Bake for 25 minutes until golden, thick, and bubbling. 7. Serve as is or with fresh bread for dipping.
