Oven-baked giant meatballs

Delicious meatballs served over pasta for an impressive meal.
Ingredients:
  • 500g lean beef mince
  • 1/2 small brown onion, grated
  • 1 egg, lightly beaten
  • 40.00 ml finely chopped fresh parsley leaves
  • 40.00 ml finely chopped fresh mint leaves
  • 500g jar tomato and basil pasta sauce
  • 250g fettuccine
  • Finely grated parmesan, to serve
  • Baby basil leaves, to serve
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced). Mix together minced meat, garlic, onion, breadcrumbs, egg, parsley, and mint in a bowl. Season with salt and pepper. Shape mixture into 4 balls. Chill in the fridge for 30 minutes if you have the time.
  • In a sturdy casserole dish, heat oil over medium-high heat. Brown meatballs by turning occasionally for 6 minutes. Remove from heat and stir in pasta sauce. Cover and bake for 20 minutes until meatballs are cooked through.
  • Prepare pasta in a generously salted pot of boiling water according to the packet instructions. Serve alongside meatballs, parmesan, and fresh basil.
