Reuben-ish sandwich

"Giant New York-inspired sandwich bursting with flavor - a true game changer!"
Ingredients:
  • 2 big slices rye bread 1cm in size
  • low fat mayonnaise
  • 3 heaped tablespoons sauerkraut
  • 1 fresh red chilli deseeded and finely sliced
  • 3 slices pastrami
  • a few gherkins
  • 60 g Swiss cheese
  • 1 handful watercress leaves to serve
Instructions:
  • Toast the bread slices on a griddle pan until golden on both sides. Spread mayonnaise on one side of each slice. Place sauerkraut and chili on 2 slices, top with pastrami, then add remaining sauerkraut, chili, gherkins, and grated Swiss cheese. Preheat the grill. Melt cheese on top of sandwiches under the grill. Assemble the sandwich with watercress and the final slice of toast. Secure with skewers. Enjoy!
