Whip up a flavorful Reuben casserole with leftover corned beef or deli pastrami for a quick and easy weeknight meal that tastes just like a Reuben sandwich. Simply mix and bake!
Ingredients:
  • 8 slices (9 ounces) seeded sliced rye bread
  • 8 ounces cream cheese, room temperature
  • 1 1/2 pounds sliced pastrami or corned beef (from the deli or homemade)
  • 8 ounces sliced Swiss cheese
  • 22 ounces (2 3/4 cups) sauerkraut, drained
  • 1 1/2 cups Thousand Island dressing
  • 2 teaspoons caraway seeds
  • 1/2 teaspoon kosher salt
  • Butter for the baking dish
Instructions:
  • Get the pan ready: Coat a 9- x 13-inch baking dish with butter and preheat the oven to 350°F.
  • Prepare the bread: Cut 6 slices of bread into 1-inch cubes to cover the bottom of your baking dish. Pulse the remaining 2 slices in a food processor until fine crumbs form.
  • Prepare the ingredients: Slice the pastrami (or corned beef if preferred) into bite-sized pieces by stacking it and cutting into strips, then crosswise to create rough squares. Stack the cheese slices and cut into strips, then cut across to form squares.
  • Prepare the filling: In a large bowl, soften the cream cheese by mashing it with a spoon or spatula. Add in the meat, Swiss cheese, sauerkraut, Thousand Island dressing, caraway seeds, and salt. Stir well until all ingredients are thoroughly mixed with the cream cheese.
  • Create a delicious layers: Start by arranging the cubed bread at the base of the baking dish (add more cubes if necessary to cover the bottom completely). Next, spread the filling evenly over the bread and top it off with a sprinkle of breadcrumbs.
  • Bake the casserole in the oven for 40 to 45 minutes until the crumbs are golden and the casserole is fully heated.
