Reuben-inspired noodle casserole with corned beef, Swiss cheese, sauerkraut, and crispy rye bread crumbs.
Ingredients:
  • 3 slices rye bread, torn
  • 0.33333334326744 cup panko bread crumbs
  • 1 (16 ounce) package egg noodles
  • 3 tablespoons butter
  • 1 cup chopped onion
  • 0.5 teaspoon ground black pepper
  • 0.25 cup spicy brown mustard
  • 3 tablespoons all-purpose flour
  • 3 cups hot milk
  • 3 cups shredded Swiss cheese, or more to taste - divided
  • 1.5 cups sauerkraut, drained (reserve juice)
  • 0.5 pound deli sliced corn beef, or more to taste
  • 3 tablespoons butter, melted
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously butter a 2-quart casserole dish.
  • Put torn rye bread into a food processor and pulse until crumbly; mix rye crumbs with panko crumbs in a bowl and set aside.
  • 1. Boil a large pot of lightly salted water. Add egg noodles and cook for about 5 minutes, stirring occasionally, until al dente. Drain and set aside.
  • In a large saucepan over medium heat, melt 3 tablespoons of butter. Cook and stir onion until lightly browned, about 15 minutes. Season with salt and black pepper, then stir in brown mustard. Remove from heat and mix in flour until smooth. Gradually whisk in milk until sauce thickens. Stir in 1 1/2 cups of Swiss cheese until melted and sauce is smooth. Mix in sauerkraut with 1 tablespoon of reserved juice and corned beef.
  • Add the freshly cooked noodles into the casserole dish, then gently pour in the flavorful sauce and mix well. Sprinkle the remaining 1 1/2 cups of Swiss cheese evenly on top.
  • Bake the casserole in the preheated oven until bubbly for about 20 minutes. Then, switch the oven to broil.
  • Combine the melted butter with the reserved rye and panko crumbs until fully mixed. Sprinkle the casserole's top with the rye crumb mixture. Broil for approximately 2 minutes until the crumbs turn golden brown. Keep a close eye to avoid burning.
