Classic Reuben sandwich: corned beef, coleslaw, pickles, and cheese.
Ingredients:
  • 1.5kg corned beef silverside, rinsed
  • 1 brown onion, peeled, halved
  • 2 dried bay leaves
  • 1 tsp black peppercorns
  • 125ml malt vinegar
  • 55g brown sugar
  • 75g mayonnaise
  • 60g sour cream
  • 2 Brand sweet spiced gherkins, finely chopped
  • 8 slices stone baked rye bread, toasted
  • 23.40 gm Dijon mustard
  • 125g Brand coleslaw mix
  • 8 slices Swiss cheese
  • French fries, to serve
Instructions:
  • In a large heavy-based saucepan, combine beef, onion, bay leaves, peppercorns, vinegar, sugar, and water. Bring to a boil, then simmer covered for 2 hours until beef is tender. Let it cool in the liquid, then slice thinly before serving.
  • In a bowl, mix together mayonnaise and sour cream; season to taste. Then, put coleslaw and gherkin in the same bowl, pour in half of the seasoned mayonnaise mixture, and mix well to coat everything evenly.
  • Preheat grill to medium. Toast bread until lightly golden on both sides. Spread mustard on half of the bread. Layer beef, coleslaw, and cheese on top. Grill for 1 minute until cheese melts. Spread remaining bread with mayo mixture. Place on top to finish the sandwich. Serve with fries.
