Create a homemade Reuben sandwich with corned beef, sauerkraut, Russian dressing, and Swiss cheese on dark rye for a delightful dining experience.
Ingredients:
  • Russian Dressing:
  • 1/3 cup mayonnaise
  • 1-1/2 tablespoon ketchup
  • 1-1/2 teaspoons prepared horseradish
  • 1/2 teaspoon Worcestershire sauce
  • Freshly ground black pepper, to taste
  • (This makes 1/2 cup of dressing)
  • Sandwich ingredients:
  • 2 tablespoons butter, softened
  • 8 slices rye bread
  • 8 slices Swiss cheese
  • 3/4 pound corned beef brisket, thinly sliced
  • 1/2 pound sauerkraut
  • 1/4 cup Russian Dressing (see above)
Instructions:
  • Prepare Russian dressing by combining mayonnaise, ketchup, horseradish, Worcestershire sauce, and freshly ground black pepper in a small jar. Shake well to blend flavors. Refrigerate half of the dressing for future use.
  • Spread a generous layer of butter on four slices of bread. Place the bread buttered-side down on a large piece of wax paper. Top each slice with a slice of Swiss cheese, then evenly distribute half of the corned beef on top of the cheese.
  • Prepare the sauerkraut by squeezing out excess moisture using paper towels. Divide it among the sandwiches and add one tablespoon of Russian dressing to each. Layer on the corned beef, Swiss cheese, and top with the remaining bread slices. Butter the top of each sandwich before finishing assembling. Enjoy!
  • Grill the sandwiches on a preheated griddle until golden brown and the cheese is melted. Carefully flip and cook the other side for about 3 minutes. Cut in half and serve with coleslaw or your favorite side dish. Enjoy and leave us a rating below!
