Delicious Reuben sandwich with corned beef, coleslaw, pickles, and cheese.
Ingredients:
  • 1.5kg corned beef silverside, rinsed
  • 1 brown onion, peeled, halved
  • 2 dried bay leaves
  • 1 tsp black peppercorns
  • 125ml malt vinegar
  • 55g brown sugar
  • 75g mayonnaise
  • 60g sour cream
  • 2 Brand sweet spiced gherkins, finely chopped
  • 8 slices stone baked rye bread, toasted
  • 23.40 gm Dijon mustard
  • 125g Brand coleslaw mix
  • 8 slices Swiss cheese
  • French fries, to serve
Instructions:
  • In a large heavy-based saucepan, combine beef, onion, bay leaves, peppercorns, vinegar, sugar, and enough water to cover. Bring to a boil, then simmer covered for 2 hours until beef is tender. Allow to cool in the cooking liquid, then slice thinly before serving.
  • In a bowl, mix mayonnaise and sour cream, season to taste. In another bowl, combine coleslaw and gherkin. Pour half of the mayonnaise mixture over the coleslaw and toss until well coated.
  • Preheat the grill to medium heat. Toast the bread until it is lightly golden on both sides. Spread half of the bread with mustard. Layer with beef, coleslaw, and cheese. Grill for 1 minute or until the cheese melts. Spread the remaining bread with the remaining mayonnaise mixture. Place on top to make a sandwich. Serve with fries.
