Traditional Reuben Casserole

Satisfying Reuben casserole with corned beef, packed with all the flavors of the classic sandwich, perfect for feeding a large group.
Ingredients:
  • 1.5 cups thousand island dressing
  • 1 cup sour cream
  • 1 tablespoon minced onion
  • 6 slices dark rye bread, cubed
  • 6 slices light rye bread, cubed
  • 1.5 pounds corn beef, cut into bite-size pieces
  • 1 pound sauerkraut, drained
  • 2.5 cups shredded Swiss cheese
  • 0.25 cup margarine, melted
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and lightly grease a 9x13-inch baking dish.
  • Combine Thousand Island dressing, sour cream, and onion in a medium bowl, mixing well.
  • Layer dark and light rye bread cubes in the baking dish, keeping 1/2 cup of each for later. Add corned beef and sauerkraut on top of the bread. Spread the dressing mixture evenly over everything. Sprinkle with Swiss cheese, add the reserved bread cubes, and drizzle with melted margarine.
  • Place in the oven covered for 15 minutes, then uncover and bake until bubbly and lightly browned, approximately 10 minutes.
