Reuben casserole: sauerkraut, egg noodles, creamy mushrooms, Swiss cheese, and breadcrumbs layered to perfection.
Ingredients:
  • 2 (10.75 ounce) cans condensed cream of mushroom soup
  • 1.3333333730698 cups milk
  • 0.5 cup chopped onion
  • 1 tablespoon prepared mustard
  • 2 (16 ounce) cans sauerkraut, rinsed and squeezed dry
  • 1 (8 ounce) package egg noodles
  • 1.5 pounds kielbasa (Polish) sausage, cut into 1/2 inch pieces
  • 2 cups shredded Swiss cheese
  • 0.75 cup whole wheat bread crumbs
  • 2 tablespoons butter, melted
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Combine the soup, milk, onion, and mustard in a medium bowl, mix thoroughly, and set aside.
  • 1. In a lightly greased 9x13 inch baking dish, layer sauerkraut, noodles, soup mixture, sausage, and cheese. 2. Combine bread crumbs and melted butter in a small bowl, then sprinkle over the cheese.
  • Seal the baking dish with aluminum foil and bake in the preheated oven for 1 hour or until the noodles are soft.
