Butter bean and vegetable patties

Savory vegetarian patties topped with tangy tzatziki and fresh lemon.
Ingredients:
  • 1 egg yolk
  • 500g orange sweet potato, peeled, cut into 2cm pieces
  • 165.00 ml frozen peas
  • 400g can butter beans, drained, rinsed
  • 40.00 ml tomato relish
  • 125.00 ml grated cheddar cheese
  • 312.50 ml dried breadcrumbs
  • Vegetable oil, for shallow frying
  • Tzatziki dip, to serve
Instructions:
  • In a large saucepan of boiling water, cook the potato for 8 to 10 minutes. Add the peas in the last 2 minutes of cooking. Drain the mixture and return it to the pan. Mix in the beans and mash until almost smooth. Let it cool before moving on.
  • Combine relish, cheese, egg, salt, and pepper. Scoop 1/3 cup of the mixture and shape into 12 balls. Gently flatten them. Spread breadcrumbs on a plate. Coat each patty with breadcrumbs. Transfer to a plate and cover. Chill in the refrigerator for 30 minutes before cooking.
  • Heat oil in a frying pan over medium-high heat until shimmering. Cook patties in batches for 2 to 3 minutes per side until golden and cooked through. Drain on paper towel-lined plate. Serve with tzatziki and lemon wedges.
