Creamy butter soup with rustic noodles cooked in chunky potato and onion broth.
Ingredients:
  • 8 cups water
  • 6 potatoes, cubed
  • 1 yellow onion
  • 1 tablespoon butter
  • 1 bay leaf
  • 2 teaspoons dried parsley
  • salt to taste
  • ground black pepper to taste
  • 1 cup all-purpose flour
  • 2 eggs
  • 0.5 cup half-and-half cream
Instructions:
  • Quarter the onion and separate the layers. Combine 8 cups of water, potato, onion, butter, bay leaf, parsley, salt, and pepper in a large soup pot. Bring to a boil over medium heat, then simmer on low until potatoes are tender, around 15 minutes.
  • To make the noodles, combine flour, eggs, and approximately 1 teaspoon of salt in a bowl. Add water until a thick dough forms. Cut into noodles, then cook in the soup until fluffy, about 3 to 5 minutes.
  • Stir in cream and warm gently.
