Creamy Chicken Peanut Soup

Creamy peanut butter soup with rich chicken broth, sauteed onions, and celery.
Ingredients:
  • 0.25 cup margarine
  • 1 cup chopped celery
  • 0.33329999446869 cup chopped onion
  • 3 (14.5 ounce) cans chicken broth
  • 1 tablespoon all-purpose flour
  • 1 cup crunchy peanut butter
  • 2 cups heavy whipping cream
Instructions:
  • In a 4 quart saucepan, cook celery and onion in butter over medium-high heat until tender, about five minutes.
  • Take the pot off the heat and stir in the flour and peanut butter until they melt. Slowly mix in the chicken broth until well combined.
  • Return the pot to medium-high heat and bring it to a rolling boil for two minutes. Then, lower the heat and simmer the mixture uncovered for about 10 minutes, giving it an occasional stir.
  • Add the luscious heavy cream and gently warm until perfectly incorporated.
