Engage kids with fun butterfly cupcakes activity.
Ingredients:
  • 125g butter, softened
  • 120g caster sugar
  • 225g self-raising flour
  • 125ml milk
  • 4.40 gm vanilla essence
  • 125ml thickened cream
  • 82.50 gm strawberry jam
  • Icing sugar, to dust
Instructions:
  • Preheat oven to 180°C and prepare a 12-cup muffin pan by lining it with paper cases.
  • Cream butter and sugar together using electric beaters until light and creamy. Gradually add the egg, making sure to beat well after each addition. Alternate adding flour with milk and vanilla. Divide the mixture evenly between patty cases and bake for 12-15 minutes until golden brown. Allow to cool before enjoying.
  • Cut a circle from the top of each cake and divide it in half. Whip cream in a small bowl until thick.
  • Spoon a teaspoon of jam onto each cake and add a dollop of cream on top. Gently press two half circles onto each cake and finish with a dusting of icing sugar before serving.
